I just started paying attention to products that have gluten. It turns out the stuff I use doesn't contain it anyway since my skin is so sensitive.

Betty Crocker's mixes are great, the brownies and chocolate cake mixes are my favorite. I add chocolate chips to both and nuts as well to the brownies.

Are you guys also GF with everything else?....lotions, soaps, shower products, make-up, deodorant, etc. I am. It took a long time to figure everything out and I had to ask lots of questions...

I'm baking Betty Crocker's GF Chocolate Chip Cookies right now....not bad ;)

I made quinoa tonight. It was good. I thought I could use my veggie steamer to make it since I don't have a rice cooker. It didn't work so ended up just cooking on the stove top. It still turned out. I had some leftover chicken pot pie filling that I ate with it. I'll try to find some other recipes and be more adventureous!!

Quinoa rocks!! Get a rice cooker and make it in there. I like to make some sort of stew and pour it over quinoa. Or even some kind of tofu/veggie stir fry works well over quinoa. You can even make salads with it!! SO many options!!!

Last week I made a yellow split pea curry in the slow cooker and we ate that over quinoa. The husband loved it. That was truly a protein packed meal...and even better as leftovers.

Is there one thing you eat a lot of? Hmmm....dinner is always the easiest meal for me. Some protein (chicken, fish, pork, etc. whatever) and vegetables.

Lunch...salads, soups....I do eat goat cheese because I can tolerate that. Hummus on toasted corn tortilla wraps is nice...I haven't been able to do sandwiches because honestly....it's not the same and can't be replaced!!! Although every now and then I will have tuna on toasted GF bread.

Breakfast....GF cinnamon raisin bread (http://www.frenchmeadow.com/) is my favorite, toasted of course. It is dairy free but not egg free. I also enjoy millet (in my rice cooker) drizzled with honey and coconut milk (http://www.soydelicious.com/products/coconut_milk_beverage.html) that I found at Whole Foods.

Between meals if hungry I graze on nuts and dried fruit and fresh fruit.

Wow. It is hard to be balanced!!! http://www.kindsnacks.com/ I found these snacks recently at they are AWESOME!!!!!! I know Starbucks stocks them and many supermarkets now carry them. Again, fruit and nuts. Seems pretty complete to me!!

I also follow everything up with some supplements, in a nutshell: multi vit., iron, vit. d, fish oil & calcium

I've been eating gluten free since about June 2009. It really hasn't been too bad. I cook a lot from scratch anyway so it's been about experimenting with new things to see what works and what doesn't. A friend got me a cookbook for Christmas called Gluten Free Kitchen. IT. IS. AMAZING. The main flours are potato starch and corn starch. I've made a couple things out of it and love it. I think my biggest problem has been finding whole grains that I can eat. I finally found quinoa but have yet to cook it up. My recent blood work shows my bad cholesterol at a slight increase and I'm only 27!! I'm hoping the increase in whole grains will help it. Any suggestions are great!

I have had to be gluten and dairy free staring in May 2009....any ideas of how to balance my diet...I am still having issues

I'm dairy free as well....I've used soy milk and coconut milk (um, yum!!) as substitutes in pancakes and baking. For a while I was also egg free...and I think I used applesauce as an egg substitute when I made pancakes. Just Google food substitutes for eggs and you'd be amazed at what other people use. ;)

that helps alot... I don't mind chainging what I eat at all. it just gets tough when I'm sitter there and thinking what in the world can i eat now. If i know I would stray to something bad.
