I'm a big fan of Hidden Valley soups because you can get them in low sodium. So I usually keep a couple of cans of soup at work: lentil, lentil vegetable, vegetable, split pea. Very filling, and super easy!

you can also use a soft corn shell do a turkey roll up . do any of you have Trader Joe's , Fruitful Yield or Whole Foods Market great selection

Sandwiches are hard, there is a rice pita ..but it's really bad :(
I can't have eggs either and the eggless gluten free bread is really hard. My doctor told me how to make french toast with gluten free bread. Soy-milk,Soft tofu and the bread pan fired with olive oil is delicious.

So, recently we tried making scones from the recipe on the back of Bob's Red Mill GF sorghum flour package. Not bad. With raisins.

We also tried the apple/pear cobbler from glutenfreegirl.com. Wonderful. I admit: I ate most of it. We're going to try her Cinnamon Rolls next. Just need to get some almond flour...

So, I'm curious. How do you all handle lunch? Do you try and make a sandwich with gluten-free bread or just skip bread and have something else?

My daughter was the chronic snacker of crackers and cookies. We had banned all the wheat snacks from the house for about 4 months. We have slowly started having cookies and crackers in the house and she doesn't even crave it anymore. She has her own snacks that we make either from scratch or from Pamelas mixes that she really likes. She's been a real trooper. She amazes me everyday how resilient she is to this whole thing. I'm the one who falls apart every now and then.
